Uncropping the Details

At the mill the cherries are placed in large hermetic tanks for a five day long fermentation. During this process nitrogen gas is introduced into the tanks in order to simulate the yeast. Brix and pH are recorded upon arrival at the mill and measured constantly throughout the process to determine the stopping point for fermentation.

For this natural processed coffee the cherry is then "aged" in a tank for five or more days before taken to the solar dryers. Drying takes 30 -45 days.
