Nice, smokey and peppery Review by Ali
Acidity Balance/Harmony Aftertaste Body Sweetness To preface- I roast in a popcorn popper- but I find it to be very successful, and that I have a lot of control ver my roast.
I roasted into the second crack, and allowed to rest overnight, for the first cup, and then another 24hr for the second. I am really happy with this bean. I find it to have some spicy notes, like the finish of a peppery olive oil, nice body, and mild cocoa flavor. My only complaint is that I find the flavor to stale in my cup quicker than some other beans. If half my cup cools, and I go do drink, the initial body has decreased, and I'm left with a smokey, somewhat stale cup. (Posted on 11/20/2017) -
Hidden Gem - Surprisingly Sweet Review by Barefoot Mike
Acidity Balance/Harmony Aftertaste Body Sweetness I really love this coffee. Mostly because it's one of those unexpected treats that takes you by surprise. Not that I've ever gotten a bean from Coffee Project that wasn't excellent, but this particular coffee really exceeded expectations, and at a bargain price, too! Far sweeter and fruitier than I would expect from a Mexican. But then again, I think we tend to think of Mexican coffees as more utilitarian than gourmet, but this Chiapas Altura definitely shatters that stereotype.
It also holds up to a range of roast levels, maintaining its distinctive flavor notes from city through full city. While this is a great cup as-is, I think it might be interesting to try in some blends, perhaps to sweeten up a cup of espresso without making it too bright. (Posted on 10/3/2017)
