While the logistics of buying coffee from Burundi can be extremely challenging, they are always a pleasure to cup. Burundi tends to produce figgy, fruity, and lively coffees with firm acidity.

Uncropping the details
Coffees are de-pulped the same day they are picked. They are then fermented underwater for 18-24 hours before being washed for another 2 hours or so. The coffees are then spread on drying tables or raised beds, where they are allowed to rest and dry for around 20 days.
