Product Description

This coffee is sourced from a farm located near the town of Apaneca within the department of Ahuachapan, El Salvador. The farm is located in an ideal micro-climate for coffee cultivation because of its location in the Apaneca/Ilametepec mountain range, one of the most prestigious areas of coffee cultivation in the country.

This is an aromatic cup with sweet complex green citrus apple/apricot/lime fruit acidity, but with a sweet chocolaty finish. Look for notes of coriandar, pine.

Pacamara are BIG beans and fascinating. They are a uniquely Salvadoran variety developed by the Genetic Department of the Salvadoran Institute for Coffee Research over the course of nearly 30 years.

The cool climate and the volcanic soil of these plantations located at the Apaneca-Ilamatepec mountain range combine to produce large bold beans with a warm exotic fruitiness overlaying a crystal clear rich acidity. Fed by generous tropical rains and nurtured by a rare and ancient Mayan soil, Pacamara is coveted for more than just its absurdly large screen size! This cultivar showcases an intrinsic, unique character typically dominated by the herbal and savory side of the coffee.

Pacamara’s parents are Maragogype and the native variant Pacas, a naturally occurring Bourbon mutation discovered by the Pacas family in the Santa Ana volcanic region within El Salvador. Maragogype is a naturally occurring mutation of Typica, first discovered in Brazil’s rural mountainous Bahia region. Maragogype is a large seed variety, (Elephant bean!) and it contributes this characteristic to Pacamara.

This coffee has a medium density. Go for slow and steady in roasting this one pre-crack. Reach second and stop.
